Cheddar cheese soup

From some of the comments on my last post, it seems several of you like the sound of the soup. It's a Cranks recipe. I thought it might be online, but I can't find it, so thought I'd post the recipe for you :)

1 medium sized onion, chopped
1 potato, peeled and chopped
About 3 carrots, peeled and chopped
1oz butter/margarine
1pt vegetable stock
I crushed garlic clove
Thyme and sage (about 1/2tsp each dried or more if fresh)
1/2 pint milk
6oz grated cheddar
Salt and pepper

Soften the onion and garlic in the butter in a large pan, add the herbs and other veg with the stock. Simmer until soft. Liquidise, then add the milk and cheese. Reheat until the cheese is melted. Add salt and pepper to taste.

(Serves 4-6)

I tend to use a combo of potato, carrot, parsnip and swede in mine. I've not tried it with sweet potato or turnip but I guess you could, she says doubtfully! I also add way more veg than they suggest. This last time, it was so thick already that I didn't add the milk - it was still delicious. I tend to use extra strong cheddar too.

Mr D thought it would be fun to photograph all of the jams, marmelades, chutneys etc I have made this year.....

I think I may have gone slightly overboard?! 77 jars in total plus all the little bits which didn't fit in the jars which are being used up out of the fridge. 

 Of course, as I suspected, he couldn't then fit them all back in the cupboard! I resisted the urge to say 'I told you so'! I still have loads of plums, blackberries, loganberries and gooseberries in the freezer, but I'll have to use them for other things because I can't make any more jam now.  I am all jammed out !

    1. Oh yes, I will certainly be giving little bags of home made goodies away for Christmas! In fact, 2 jars have already made their way to new homes :)

  4. I made so much jam and jelly last year that I have had to put the brakes on this year, I have bottled lots of stewed fruit, using the deep water bath method, instead so there will be lots of fruity crumbles, crisps and sponges to enjoy.

    1. I'm kind of hoping to be moving house next summer, so may be grateful for these jars! I've never bottled fruit before so that can be next year's challenge :)

  5. Wow ... an amazing array of lovely homemade goodness. It's nice to see them all lined up isn't it. Do you keep opening the cupboard to peer in at them ..... or is that just me ;-)

    I have 59 jars of jams and pickles up to now so you have won the 'preserving the Summer competition' :-)

    1. Hooray, I've won something!! That doesn't happen very often.
      I see them every time I open the fridge as they are stored in the spare space above the fridge - gives me a thrill each time I see them :)

  7. What a great selection! First year of chutney making for me this year - both green and red tomato. Both delicious but biggest outlay was buying jars. Have learnt a lot from my mistakes!!

    1. I've not made red tomato chutney - never have enough, but I'm sure it's very nice. Yes, I seem to make mistakes each year and then have to remember. I'm thinking that if I document the mistakes on my blog, then it will act as a reminder :)

    I think some kind of fruit bread, crumble or fruit type cake that you could freeze ?
